I can confidently say I like scallops as much as I like bacon. But with scallops being expensive, I am far more reticent about buying them. I guess tonight was treat Linda night. Scallops, wild mushrooms, wild rice... decadent.
Everything is better with bacon...right? Scallops are delicious on their own, but when you cover them in bacon you end up with decadent bits.
Here is the recipe I worked from:
- 2 pounds large sea scallops patted dry
- 1 pound bacon slices cut in half crosswise
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 1/4 teaspoon garlic powder
- salt and pepper to taste
- 2 tablespoons chopped parsley
- cooking spray
But I didn't follow the amounts for me as I am only one person. But I did include each ingredient, I just made up all the amounts to suit my needs.
INSTRUCTIONS
1. Preheat the broiler. I covered the pan in tinfoil, but you ccoculd spray it with cooking spray.
2. Cut each slice of bacon in half. Wrap each scallop with a slice of bacon and secure with a toothpick. Arrange in a single layer on a pan.
3. In a small bowl mix together maple syrup, soy sauce, garlic (I used real) and a bit of salt and pepper. Brush this on the scallops
4. Broil for 6 minute, brush again with sauce and broil again for 6 minutes
ENJOY!
I served this with rice and wild mushrooms.
