Apple Brie Salad
serves 4
- 2 apples cut in small chunks3/4 cup chopped, toasted pecans
- 12/-3/4 cup raisins or cranberries
- almost one wheel/hunk of brie- skin removed, chunked
- lettuce, small pieces, ripped
It can all be made to suit your appetite needs. I served this for lunch when friends came over. It was all a wing and a prayer...
Ingredients
- 1 small cucumber, peeled, seeded and chopped
- ¼ cup extra-virgin olive oil
- 2 tablespoons red-wine vinegar
- 2 tablespoons chopped fresh chives or shallots
- 2 tablespoons chopped fresh parsley
- 1 tablespoon plain yogurt or milk
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- ½ teaspoon salt
Ingredients
- about a half cup grated fresh (i.e. REAL) Parmesan cheese
- 1/4 teaspoon freshly ground black pepper
Line a cookie sheet with parchment paper.
Put circles of parmesan cheese (you decide how big you want them, mine were about 4" in diameter.
Bake the parmesan chips for about 8 minutes. They should be sizzling when you take them out and the edges JUST starting to brown.
Allow them to settle for about 5 minutes. This allows them to firm up. Serve with soup or salad.
This make a yummy lunch. Add some soup if you want to make it into a luncheon. Enjoy.
