It would probably be an understatement to say my world imploded when he died. I am having to reinvent 'me'. That may sound easy or refreshing or hopeful, but for me it's hard. Others definitely handle it far better than I.
Russ' breakfast routine was cereal, juice and coffee on Tuesday, Thursday and Saturday. Scrambled eggs with a bit of cheese on the others. That was his routine, not mine. Now? I generally have a refrigerator breakfast. Sometimes that is leftover dinner: pizza, mashed potato pancakes stuffed with veggies or yesterday, Quinoa and Rice Cakes.
The evening before I had grilled chicken and my Quinoa concoction. I made this with quinoa, rice, garlic, shallots, rosemary, oregano and salt & pepper. Yummy, but I made too much. Rather than eat as is for breakfast I cooked up some bacon (good in everything as far as I'm concerned). I whipped up an egg, mixed in a fair amount of parmesan cheese and added the crumbled bacon and the quinoa mix. I drained the bacon grease and used the same pan to fry up two 'pancakes'. I ate one for breakfast and one for lunch.
My point? You can always look in the refrigerator and create something tasty with what you find. Russ would have been onboard with this for lunch, but breakfast was always the standard routine. One small shift I have made in recent months is the freedom from routine for breakfast....
