The bananas were looking squishy, brown and spotty yesterday and of course that makes them both king in the fruit kingdom and the black sheep simultaneously. Sitting in the bowl they looked icky and mushy, in desperate need of transformation. I whipped up 3 small loaves of Chocolate Chip Banana Bread with Walnuts.
Chocolate Chip Banana Bread with Walnuts
1 1/2 cups flour (if you use GF flour add 1Tbl arrowroot and 1/2 tsp xanthan gum)
1 tsp baking soda
1 tsp baking power (if you are high altitude make that 3/4 tsp)
1/4 tsp salt
3/4 cup chocolate chips
3/4 chopped walnuts
1/2 cup (1 stick) room temperature butter
1 cup sugar (if you are high altitude take away 3TBL of the sugar)
2 large eggs
1 cup mashed banana (a few Tbl more if high altitude)
2 Tbl lemon juice
1 1/2 tsp vanilla
Preheat oven to 350
Grease and flour loaf pan(s).
Combine chocolate chips and nuts with a small amount of your flour. This will help them to distribute throughout the bread and not all sink to the bottom.
Whisk together the first 4 ingredients.
Beat butter til fluffy.
Gradually add sugar and beat til blended.
Beat in eggs one at a time.
Beat in mashed bananas, lemon juice and vanilla.
Beat in flour mixture.
Using rubber spatula, mix in chips and nuts.
Pour into baking pan(s).
Bake until tester comes out clean.
For me that means 3 small loaves 35-40 minutes or 1 large loaf 55-60 minutes. Obviously that depends on your oven.
