And check out the muffin pan. I received that as a gift about 40+ years ago. It is heavy hand thrown pottery cups all connected with the top ring. The cups are all separate underneath.
Strawberry-Blueberry Morning Muffins (i.e. Quiet Muffins)
1 cup strawberries
1 cup sugar
1 1/2 cups gluten free flour
1 tsp. xanthan gum
or if you are not gluten free use regular flour and leave out the xanthan gum
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. nutmeg
1 tsp. salt
1 ripe banana mashed
2 large eggs
1/4 cup canola oil
1 lemon, zested (whole doing fresh)
1 cup blueberries
wash, dry, coat with 2 Tbl. flour (from your flour total amount) to keep berries from going to the
bottom of the muffins
1 cup chopped walnuts
Preheat oven to 350
In a small bowl, mix together flour (less what you use on the blueberries), cinnamon, baking soda, nutmeg and salt.
In a large bowl, whisk together the mashed banana, eggs, oil, sugar, strawberries and lemon zest.
Mix dry ingredients into the wet ingredients until combined. Do not over mix. Fold in walnuts and then the blueberries.
Scoop batter evenly into muffin cups. Bake until toothpick comes out clean, about 30 minutes. Cool on rack to room temperature.
I make these for guests who rent the guest house. I try to have some little treat for them when they arrive and it is usually something I am wanting to eat…. today muffins. Enjoy.
