- I cooked the shells, drained them, cooled and put in the frig to use the next day.
- I cooked the spinach, drained and squeezed out moisture. Again into the frig for next day.
INGREDIENTS:
1 pkg chopped spinach, cooked and squeezed
1 cup shredded mozzarella cheese
1 cup cottage cheese
1 egg
1 TBL (more?) fresh parmesan
1/4 tsp. nutmeg
16 jumbo shells, cooked
1 - 131/2 oz. spaghetti sauce
Of course for the purist you can use fresh spinach and make your own spaghetti sauce. I do this occasionally, but with our more recent time crunch, this is less often. Casseroles are easy for Russ to manage so that's another nice reason to make this dish.
DIRECTIONS:
Heat oven to 375.
Mix everything in a bowl (except sauce)
Fill shells
I use a small pointy teaspoon for this.
Use a 12x8 dish/pan. Put a layer of sauce on the bottom
Place shells side by side
Cover with remaining sauce
Then I like to add another layer of parmesan, but then I LOVE parmesan!
Bake 30-40 minutes
Serves 4 (-ish)
