Mixed Mushroom Tart
For the crust:
1/4" sliced potatoes partially cooked in microwave (if you are in a hurry) or sliced left over potato if you have it
The Tart:
1/2 lb. mixture of wild mushrooms
1/2 lb. cultivated mushrooms
2-3 cloves of garlic, minced
a splash of white wine or chicken broth
1 Tb. Soy Sauce
a titch of thyme, rosemary, parsley
3 eggs
3/4 cup milk
1/2 cup grated gruyere
1/4 cup+ grated parmesan
Put it All Together and Bake:
1. Par cook the potatoes
2. Spray a pie/quiche plate with oil
3. Saute mushrooms for about 5 minutes until liquid is released
4. Add garlic, wine, soy sauce and spices
5. Preheat oven to 375
6. Beat together eggs and milk
In your plate:
1. Potatoes
2. Mushrooms
3. Gruyere cheese
4. Pour egg mixture over all
5. Sprinkle on Parmesan
6. Bake 30-40 minutes
Other ideas:
- add bacon or ham
- add spinach
- use left over rice for bottom 'crust'
- top with sliced tomatoes
It's pretty free form... just put in things you like and it will be yummy!
