A few tips...
- Use a glass bowl for the microwave.
- Put the tin foil on a towel or newspaper on the counter; the brittle is HOT when you pour it on.
- This is candy hot (burny, burny) so be very careful.
- Once you have poured the brittle onto the foil, do NOT put the bowl in the sink and fill with water.... it will shatter the bowl. Wait 15 to 20 minutes, then soak the bowl with water. Wait another 15-20 minutes and it will clean right up.
Ingredients
1 cup sugar
1⁄2 cup white Karo corn syrup
1 dash salt
1 cup shelled raw peanuts (or I did the easy thing and bought a can of salted peanuts)
1 tbsp butter
1 tsp baking soda
1 tsp vanilla
Directions
- Combine sugar, Karo syrup, peanuts and a pinch of salt in a 3 quart microwave safe glass bowl.
- Microwave on high for 6 minutes.
- Remove from microwave and stir in butter.
- Microwave for another minute.
- Remove from microwave and add the soda and vanilla. Stir. (mix will be foamy).
- Stir quickly and pour onto tin foil..
- Spread thin-ash for brittle candy.
- Let this cool completely before breaking into chunks.
