First was prepping the lemon...
Squeeze a 1/2 cup of juice and zest a 1/2 tsp (or there about) of lemon
INGREDIENTS
- 2 cups flour
- 1 cup chilled butter, cut into small pieces
- 1/2 cup powdered sugar
- 1/2 cup unsweetened coconut
- 2 cups sugar
- 4 large eggs
- 1/2 cup fresh squeezed lemon juice
- 1/2 tsp.+ fresh lemon zest
- 1 tsp. baking powder
- 1/4 cup flour
DIRECTIONS
- Preheat ove to 350
- Line 13x9 pan with parchment and spray with oil
- In a food processor (I have a small one so do half at a time), combine 2 cups flour, butter pieces, 1/2 cup powdered sugar and 1/2 cup coconut
- 'Process' and put in a bowl.
- Using your hands squeeze together so it clumps
- Press into the bottom of prepared pan
- Bake 20 minutes, until edges golden
Meanwhile... - In large bowl, whisk together 2 cups sugar, eggs, lemon juice, lemon zest, baking powder and 1/4 cup flour until blended
- Pour over hot crust
- Bake til top set...about 20+ minutes
- Cool
- Cut into squares
- Dust with powdered sugar.
