First I turn on both sides of the grill while I prep a whole chicken. Since it will be on the grill, I use a cast iron pan.
Wash the chicken and then stuff with chunks of peeled apple, filling the cavity with apples. To the outside of the chicken, first slather with mustard (I use Grey Poupon). Next sprinkle liberally with salt, pepper, and oregano. Squeeze on some lemon juice and sprinkle with chopped onion. Drizzle with olive oil and give it a good douse of Marsala Wine. Prep is done!
Turn off one side of the grill. This is the side you will put the pan. Roast with cover down until tender, basting often.
It really is quite yummy. It's great when it's hot outside and you don't want to heat up your kitchen with the oven on. Great left-overs for chicken salad or sandwiches.
