Almost 40 years ago I was in the hot tub at the Sugarbush Rec Center after teaching a class. A group of people were talking dinner options and some guy said "You'll love this one, so easy, so delicious!" He tossed out the easy to remember recipe and I went home and tried it that night. I have been making it ever since.
Simple, Simple, Simple
- Turn on one side of your grill
- Wash whole chicken
- Peel, core and chop an apple into 8 pieces
- Stuff the chicken with the apples.
- Place the chicken in a cast iron fry pan
- Smother the chicken with dijon mustard
- The next steps are equally simple. Drizzle with lemon juice and olive oil.
- Splash on some Marsala Wine
- Sprinkle with oregano, salt and pepper
- Lastly, mince a small onion or a shallot and sprinkle on top.
I turn the pan once in the process. Sometimes I throw in some potatoes and/or carrots. It's hard to mess this up. The trickiest part is figuring out how long to roast it, but I am certain you can do it.
