You wonder... how this is about potato puffs?
I put up about a tenth of our Christmas decorations this year. For the last 5 years our tree has been outside on the porch; first to accommodate our tree climbing cat and now to accommodate Russ' wheelchair. Presents are few. That makes Christmas Day about the two of us, talking with the kids and family on the phone (our TRUE presents) and having a lovely dinner. I splurged on some On Sale tenderloin steaks and we had a bottle of the coveted Furtsch wine, smooth, rich and divine. A nice dinner does not mean slaving away in the kitchen so I made potato puffs to go with grilled steaks.
A pared down celebration is our new celebration; our world wrapped in all the hope and love we can muster, our new world, bruised and imperfect as it is shining light in our darkness. And this Christmas? Let's make Crispy Potato Puffs!
You can make this ahead of time through step 4 and finish, bake and serve. I also make the full recipe and freeze some for one of those work nights I am not excited about cooking.
Note: I rarely follow a recipe. This is the actual recipe which of course you can do exactly, but I just uses it as a guide. I rarely measure ingredients. I used feta, cheddar, butter and sour cream to mash my potatoes I added the egg INTO to potato and I used gluten free crumbs. Other than that I followed it precisely!
Ingredients:
1-1/2 lab of potato
2 Tbl butter
1/2 cup milk
4oz crumbled Blue Cheese
salt and pepper to taste
2 large eggs, lightly beaten
2 cups panic bread crumbs
To Make... here is the quick version
1. Make mashed potatoes.
I used feta, butter, cheddar and sour cream
2. Cool slightly
3. Spray cookie sheet with old spray
4. Whisk eggs in one bowl and put bread crumbs in another bowl
5. Form golf ball sized balls with potato, dip into egg mixture, roll in breadcrumbs
6. Place on cookie sheet
7. Refrigerate at least an hour
8. Preheat oven to 425
9. Spray top of potato puffs and bake for 15 minutes.
10. Gently flip and bake 7-10 minutes more
