Into the crock pot:
1 small can Fired Roasted Tomatoes
1 small can drained Navy Beans
1/2+ cup of white wine
some spices:
thyme
rosemary (I am a little heavy on this)
sage
oregano
pepper
bay leaf
2 garlic clove, minced
1 or 2 minced shallots
finally add:
4 sausage (I use mild Italian)
4 chicken thighs (skin removed)
I add a bit of chicken broth here… just enough so that I know it won't be dry when I get home. Perhaps another 1/2 cup+. Turn crock pot on low for 6-8 hours.
When I get home, and IF I have the energy I sometimes brown up the sausage in a pan (NOT necessary). I add about a cup of grated cheese and voila…dinner.
