Ingredients
- 1 small shallot, diced
- 1/2 cup dry long-grain white or basmati rice, cooked
- 1 tablespoons chili powder
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- a dash of oregano
- 1/2 teaspoon sea salt
- 1/2 cup corn kernels, frozen
- 1/2 can black beans, strained and rinsed
- 3 cups cooked chicken
(I just bought some cooked chicken at Sprouts) - 1 tablespoon olive oil
- 2 tablespoons salsa
- grated cheese, your choice
Instructions - Preheat oven to 350°F.
- In a baking dish, add all the ingredients, stir to combine.
- Cover the baking dish with aluminium foil and then transfer to the oven to bake for 30 minutes
- Once complete, remove the baking dish from the oven, remove the aluminium foil. Add more grated cheese if you like things cheesy.
- Return the baking dish to the oven for a final 5-10 minutes.
- Remove from the oven, allow to cool slightly, and serve with a sprinkle of fresh cilantro and spring onion if desired.
If you like things a bit spicy, you could add one jalapeño pepper, diced.
