I scanned the net, found four recipes, combined, eliminated and checked my frig. Here is the outcome.
INGREDIENTS
a small to medium spaghetti squash
1 1/2 cups half and half
6 TBL butter, melted
2 cloves minced garlic
1 tsp dried Rosemary (or a TBL fresh)
1/4 cup lemon juice
1 TBL lemon zest
1 cup grated Parmesan
1/2 cup grated Swiss
1 tsp salt
1/2 tsp pepper
I also added:
grilled chicken, in bite sized pieces, I did this before hand
4 or 5 slices cooked chopped bacon
chopped sautéed zucchini (or broccoli or mushrooms or nuts)
I served with :
grilled asparagus
INSTRUCTIONS
- Bake the Spaghetti Squash. I slice it in half, scoop out the seeds, put it cut side down on the cookie sheet. Bake 20-30 minutes at 400 degrees.
- Melt butter in a saucepan.
- Saute mince garlic
- Add lemon juice
- Pour 1/2 and 1/2 in skillet with butter. Turn to med. high until bubbles appear.
- Add Rosemary and reduce heat...simmer
- add cheese bit by bit - be sure Swiss chesese is incorporated before adding
- add chicken, bacon and zucchini
At this point you can serve or cool and refrigerate until ready to serve. Heat it through and voila!
I grilled some asparagus to fill out the meal.
