But before you give it a try, please know that it is not heart healthy. I try to eat healthy. My motto is everything in moderation and eat real; no fake or modified ingredients. That said, every once in a while comfort food is a must. So here you have one option...the comfort of cheese and pasta.
INGREDIENTS
1 lb. cavatappi or other short spiral pasta
4 Tbl butter
4 Tbl flour
4 cups milk
1/2 tsp. fresh-ground pepper
1/2 tsp. salt
2 cups or grated Gruyere
1 1/2 cups grated Gouda
1 1/2 cups grated Parmesan
DIRECTIONS
- Preheat oven to 350. Cook the pasta using package directions. You can leave it a tad underdone as it will cook more in the oven (officially termed al dente) Lightly grease a 9 X 13 pan.
- Melt the butter, add the flour whisking constantly until smooth. Slowly mix in the milk, stirring until smooth after each addition. Continue stirring until sauce just begins to boil and thicken. Add salt and pepper.
- Remove from the heat and add 1 cup of Gruyere, again whisking until smooth. Add Gouda and Parmesan and whisk until smooth. Combine with the pasta.
- Transfer Mac and cheese to your oven proof dish and top with remaining Gruyere. Bake about a 1/2 hour or until bubbly.
