I experimented with these bars for Ron. They were WITH gluten, sugar and eggs...so I adapted the recipe to be WITHOUT. I will post the original recipe and add my adaptations. It's pretty darn good. Try it.
CARDAMON-CARROT BARS
1/2 cup golden raisins
2 cups brown sugar
To adapt I used Swerve Brown sugar, a zero calorie sweet alternative
2/3 cups unsalted butter, melted
1 tsp. vanilla
2 large eggs, lighten beaten
I used 6 TBL. Aquafabba (chickpea water beaten to soft peaks)
1 cup shredded carrot
2 cups flour
I used King Arthur Measure for Measure (GF)
1/2 cup nuts, chopped
It called for pistachios or walnuts...I used pumpkin seeds. You could use
sunflower seeds
1/2 cup white chocolate chips
1 tsp. baking power
1 tsp. ground cardamon
1/4 tsp. baking soda
- Preheat oven to 350. Spray an 8" square pan.
- Place raisins in a bowl and cover with boiling water. Let them soak for 10 minutes.
- In a large bowl, beat brown sugar, melted butter and vanilla until smooth. Add eggs and beat until combined.
If you are using Aquafaba, beat 6 TBL until soft peaks happen. Then add this when you would have added the eggs. - Fold in the carrots and drained raisins. Add flour, nuts/seeds, white chocolate chips, baking powder, cardamon, salt and baking soda. Fold this all together until mixed and spread into the pan.
- Bake until golden brown and center more or less 'set', 45-50 minutes. Cool in the pan on a wire rack. When cool, cut into squares.
