I decided to use orange beets sheerly because they stain less...good choice. I used Heather's recipe for the most part.

Since the Kitchen Next Door opened in Boulder in June 2011, one of its signature dishes has been the roasted beet burger. The hearty mixture of roasted beets, chickpeas, celery, onions, and carrots arrives topped with tangy feta, arugula dressed in a lemony vinaigrette, and caramelized onions. Servers recommend you add hummus and a side of kale chips (we agree).
I decided to go with my preference of black beans rather then chickpeas or garbanzo beans...just my preference, all three will work. I rather think the black beans have an earthier flavor so there you have it. Rather than dice the carrots which most recipes call for, I used my large grater (it was Russ' mothers) and chopped the shallot. This I sautéed in a cast iron fry pan til just soft.
One other tip I read about was to make your patties about 1" thick which keeps them from crumbling after being cooked.
Makes 5 patties
Ingredients:
oil to sauté carrots and shallots
1 cup carrots
1/2 cup thin sliced shallots or your favorite onion
1 lb. roasted beets
1 cup black beans
1 egg
1/4+ panko crumbs
1 tsp. cumin
1 tsp. salt
1 tsp. pepper
pinch cayenne
pinch paprika
2 Tbl. parsley
and whatever buns and toppings you want. Perhaps feta, cheddar, Swiss cheese, avocado, lettuce, arugula, a dash of tahini sauce. What sounds good to you?
Directions:
- Preheat oven to to 350
- Line cookie sheet with parchment paper, clean and trim beets then quarter them and roast them 30 minutes-ish. Cool and then peel.
- On stove, add a little oil to a pan and sauté carrots and shallots until just soft. (don't overdo it)
- In a food processor put beets, carrot/shallot mix, and egg. Pulse until mixed and uniform. Add panko crumbs and pulse again. Put all this in a bowl and stir in the spices
- I let this sit in the frig for a while, but you could form patties, put on a parchment lined pan and refrigerate for a while.
- When ready, put 'burgers' in preheated 350 oven and bake 20-25 minutes, flipping once - you don't want the edges to get too dry.
Final Note:
I only made 3 patties for the 3 of us and then 2 more for the freezer. I am hoping they will be an easy meal from the freezer, only needing to be thawed and baked.
