A great part of baked oatmeal is it's adaptability. It can be altered depending on what is in your fridge and what the dietary needs are for those enjoying breakfast with you. And the good news? This can be made the night before and reheated. Once made, you can eat it cold from the frig or reheat it in 300 oven for about 15-20 minutes. It stores well in an airtight container. Simple - all needs met.
INGREDIENTS
- 2 cups old-fashioned oats
- 1 teaspoon baking powder
- 1/4 cup light brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/4 cup oil
- 1/2 teaspoon vanilla extract
- Preheat oven to 325°F and grease a 2-quart casserole dish. Set aside.
- In a medium bowl combine eggs, milk, oil and vanilla.
- In another bowl, combine oats, baking powder, brown sugar, cinnamon, and salt. Add to the milk mixture. Stir until combined.
- Transfer to the greased baking dish and bake for about 45-50 minutes, until set and golden brown on top.
- Serve warm or at room temperature.
