Ingredients
- 1½ cup flour
- 1½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- 1 cups apples, peeled and chopped into 1/2" dice
- ¾ cup sugar
- 2 Tbsp vegetable oil
- 1 large egg
- 1 cup blueberries, or cranberries
- ½ cup walnuts, roughly chopped,
- Preheat oven to 350°F. Prepare loaf pan(s) by coating well with non-stick spray.
- In a bowl combine flour, baking soda, cinnamon, and salt. Set aside
- In a large bowl mix sugar, egg and oil. Stir in apples and mix well.
- Add flour mixture, stirring just until combined. Batter will be thick.
- Gently stir in blueberries and walnuts, just to coat. Do not overmix.
- Spread batter evenly into prepared pan, filling about ¾ full.
- Bake for about 1 hour or until a toothpick inserted in the middle comes out clean. Cool completely before cutting and serving.
Note
The apples give off juice, but if you are worried the batter is too thick just add a splash of orange juice or milk.
